My favorite recipe for this holiday combines sweet potatoes and butternut squash into a mashed dish. Individually, they are both delicious and easy to make, but together!? They are incredible.
Ingredients:
2 sweet potatoes
1 butternut squash
3 tablespoons butter (softened to room temperature)
Cinnamon powder (a pinch or two)
Clove powder (a pinch or two)
1/2 teaspoon of garlic paste
1 teaspoon of honey or agave
1 tablespoon of cottage cheese
Salt and pepper to taste
Directions:
Peel and seed squash and potatoes and cut into large cubes. In a large cooking pot, boil cubes until soft but not mushy. Drain and transfer cubes to large mixing bowl. Mash together and add the butter, garlic, and honey or agave.
Sprinkle in the seasoning: salt, pepper, cinnamon and clove powder. Finally stir in the cottage cheese and voila! All done and ready to serve!
