Mmire Stew-Mushroom stew

By Francine Holmes

ImageMushroom sauce or Mmire stew [um-mee-re] is one of many staple dishes in Ghanain cuisine. It’s is made with fairly basic ingredients that’s are easy to find at the local market, including red palm oil, onions, mushrooms, smoked fish and tomatoes.

A key ingredient is what the locals refer to as stall fish – it is a salted fish sold in small chucks that is used as a flavor enhancer.

It is a delicious and quite filling meal, typically served with boiled yams or plantains.
